I started making wine in April of 2010 so I’m a beginner. I work mostly with country fruit wines made from fruit I pick here in the backhills of Northeast Pennsylvania. I consider this hobby a exercise in patience. It is not for the person who needs results now.

How wonderful to find your site. I also decided to start making wine last fall and had 3 batches on the go before I had a clue what I was doing. Dandelions, strawberries, apples, raspberries, cranberries, blueberries, etc I very much look forward to reading your blog! Hi Scott, I see that you have made a number of “chocolate” wines. I am currently making a one gallon batch of raspberry wine. I would like to experiment by making one of the bottles into a chocolate raspberry wine. Can you give me some tips on how to do this?

For 1 bottle the best way would be to add a little chocolate extract a drop at a time until you have the flavor you want.
